Attendees who dine at Viking Dogs during the pop-up will each receive a raffle ticket; 5 chosen warriors will win FREE Viking Dogs for a year—1 combo meal per month through Sept. 2018. Viking Dogs will officially open at 11 a.m. Tuesday, Sept. 5. The restaurant joins En Tu Boca, Milk Man and Rooster Republic along with vintage arcade bar Mission Control and the bar Lost Art—which both offer 18 beers and 2 draft cocktails—as the food hall’s main offerings. Viking Dogs replaces Vietnamese restaurant Bone Stock in the market. “McFadden Public Market has a great vibe and fits our brand well. Working with owners Leonard Chan and Phillip Kwan has been a dream come true,” Viking Dogs owner Luis Flores said. “There was a lot of interest in that spot from many established brands and they chose us so we’re going to take Viking to the next level. Our longtime fans who have been chasing the truck for so long will finally have a place to call home.” Food, Owner & Truck Photos: bit.ly/VikingDogsMediaKit ABOUT LUIS FLORES Viking Dogs owner Luis Flores lives in Anaheim with his wife Heather and son Archer; he’s an Orange County native who grew up in Huntington Beach. His longest restaurant experience before owning his own came from Pirates Dinner Theater in Buena Park where he was bar manager for 5 years. He launched The Viking Truck in 2011 just after the first wave of O.C. food trucks including Dos Chinos, Piaggio on Wheels and the OC Food Truck had established themselves. Flores leased “a beat up, old taco truck almost as old as I was for $3,000 per month” to start Viking. The truck debuted at Bootlegger’s Brewery in Fullerton where they served everyone for free on their first night (OC Baking Company’s Dean Kim donated all the bread that night, too, and Viking Dogs still proudly serves his products). In October 2014 Luis and his wife Heather opened Meat Up BBQ in Placentia with a business partner. In 2016 Luis took full control of Meat Up BBQ and has been working to grow both brands simultaneously. Flores now owns two food trucks and two restaurants; both offer food truck rental and full catering capabilities. THE FOOD Viking Dogs serves sausages, hot dogs, hand-dipped corn dogs (made with bratwurst!) and loaded or naked tater tots. Sausages are sourced from legendary Mattern Sausage & Deli in Orange and the lobster buns come from acclaimed baker Dean Kim’s OC Baking Company in Orange.
